I'm back! I took a vacation for myself last week. Like many other vacationing moms near the holidays, my days were spent cooking, preparing, and cleaning from the big Thanksgiving feast!

I did enjoy the change of pace for a while. Not that I could stay away from the newsletter for long. I was finding out about too many wonderful things to keep it all to myself.

Apple Latkes


Ingredients:

  • 1 egg
  • 2/3 cup plain yogurt
  • 1 cup flour
  • 1/2 teaspoon baking 
  • powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 2 tablespoons 
  • sugar
  • 1 cup grated apple (I like granny smith)
  • oil for frying
  • Maple 
  • syrup or confectioners' sugar and ground cinnamon for garnish

Instructions:

  1. In a bowl combine the egg with the yogurt, mix to combine and set aside. 
  2. In another bowl combine the flour, baking powder, baking soda, cinnamon and sugar.

How many times does every mother patiently answer the question, "How many days until Christmas?"

Several years ago, my son just couldn't grasp the concept of counting down days until we made a paper chain to give him a visual aid.  He would then happily wake up each morning, rip one link off the end, and see the chain shorten as Christmas or other special day drew closer.  

As a 2nd grader, he now understands and can use the calendar, but we continue this tradition.  Now he can make ...

An Easy, Fun, Nature Craft

This is super easy, actually easier than I thought it would be!

Ingredients:

  • One packet Knox Gelatin (found in the baking isle in the grocery store it comes in a box with 4 packets)
  • ¾ cup Bird Seed 
  • ¼ cup Water 
  • Ribbon or string that you want to use to hang the ornament
  • Cookie cutters or muffin tins
Instructions:
  1. Just pour the package of Knox Gelatin in a small pan mix in the water
  2. Heat on low until the gelatin is dissolved

18th Century Neapolitan Creche at the Abbey of Regina Laudis in Bethlehem, CT The Crèche contains 68 figures between 14-16 inches high.  The figures, made of carved wood, terra cotta, porcelain and jute, are situated in a small village made primarily of the bark of cork trees that evokes the local surroundings of the Neapolitan artists of the time.  Dressed in their original 18th-century costumes, the figures vividly portray, in addition to the Holy Family, children, old and young women bearing gifts, merchants and peddlers, a princess and her whippet, angels, the Three Kings and peasants and their farm animals.
