Buffalo Chicken Meatballs

The Perfect Superbowl Appetizer

Football games just aren't the same without wings.  Well this year put a twist on those messy wings and try these fabulous Buffalo Chicken Meatballs.  The great thing about these is that you don't have people struggling to eat wings, worrying about what to do with their bones and their ridiculously messy face and hands.  I love a neat appetizer!
Ingredients:
  • 1 pound of ground chicken
  • 1/2 of one medium onion chopped
  • 2 cloves of garlic grated or finely chopped
  • 1 tablespoon of Lawry's Seasoning Salt or your favorite seasoning salt
  • 1 egg
  • 1/2 cup of plain bread crumbs
  • 3/4 cup Frank's Hot Sauce Buffalo Style
  • 2 tablespoons of butter

Instructions:
  1. Heat oven to 400. 
  2. Line a cookie sheet with parchment paper.
  3. Mix everything accept the Frank's Hot Sauce and the butter in a bowl.  I use my hands to mix some people prefer a food processor but I hate doing dishes so adding one more to the mix isn't happening.
  4. I use a melon baller/cookie scoop to scoop the meat and roll into balls.  
  5. Bake for 10 - 13 minutes.  While meatballs are cooking heat Frank's Hot Sauce and butter in a small sauce pan. 
  6. Once meatballs are done place them in sauce pan to coat with sauce or you can leave it on the side and allow people to dip the meatballs into the sauce if you are worried about the heat.  (Or you could even toss some in BBQ sauce for kids that don't like hot)
  7. Serve with Ranch Dressing (or Blue Cheese if you like it better, but I don't see how you could like anything better than Ranch).
